Right now I would have to say a Priest is the best consider WoW has made them so OP in both Shadow and Discipline spec (though Disc spec is the most PVP design). It's a little bit harder to PvE with them because they are still clothies, but since Cata has come out they've improved the class a lot.
I would probably pick a Paladin for PvE since they can take a hit, dish it back and then heal. Though their class has always been a bit on the complicated side, in my opinion. And since Cata they've become even more so.
I've honestly never played much on a warrior class being that it seems to take forever to build up even rage to attack and by the time I've got it built the target is already. But a friend mine has one high leveled and he loves it. So the warriors are hard to level up until you get to a certain point.
But I said all of that to say this; Priest are OP and Paladin are built to outlast. I think you'd be good with either one of those for PvP. Though, a Priest can break a Paladin's bubble... and boy does it piss them off! lol
