Almost every spec can be viable in raids. Some specs and classes are a little simpler than others, which makes it easier to reach their potentials. I can tell you from playing my lock this expansion that affliction has seen quite a few up and downs through buffs and nerfs. Every class is subject to such changes, so no one class or spec is guaranteed to maintain its current position in the absolute best dps rankings. To say it in other words... just because a certain class may be considered the best dps currently, there's nothing stopping the developers from nerfing that class and moving it into last place.
Because of this I'd say just play a class you enjoy. Out of the 30 class and spec combinations, affliction warlock is my absolute favorite. In heroics I'm almost always first or close to first with damage done/dps done per fight. In raids I'm usually in the top 3 or top 5. My gear for pve is never the greatest, so there's always room for improvement. If you have interest in playing a warlock and speccing as affliction, go for it by all means. Their dps is competitive and any raid should be willing to take you in if there's a spot open for a lock.
When it comes to leveling, I favor affliction to all the other specs. If you enjoy demonology, I think it's perfectly alright for leveling. I will say that destruction seems to be weakest for leveling.
