Easy. Take the first one.
Here's the break down.
Armor: reduces the amount of damage you take. 105 armor amounts to like .00001% at 85, so I wouldn't begin to care about it.
Stamina: equals more health and by extension, better heals and recovery. Somme heals work on percents, so the more health you have, the more health you recover. 15 stamina is equal to roughly 150 life, not including translation bonuses.
Strength: only important for Death Knight tanks. For any other tank, it's nice, but not actually necessary. For Death Knights, they receive a portion (3% if it hasn't changed) of their strength value as an added parry value.
Parry: Important. Very important for Death Knight tanks.
Block: the amount of damage you can nullify without taking armor damage and the chance you have to completely nullify incoming physical damage. very important for paladin and warrior tanks. Useless for Death Knights.
Dodge: Very important for all tanks.
Mastery: It varies, but it stands to reason that you need a hefty chunk of it for any tank, especially a Blood Death Knight.
Spirit: not all that important for tanks, but great to have.
Intelligence: You're the guy making dragons angry and going toe to toe with gods... You aren't really going to need it even if you (slim chance) happen to have it...
Attack: it can be useful, but usually you just don't find that you need it as a tank.
Hit: VERY IMPORTANT. You can not hold aggro if you can not hit things.
Expertise: refer to hit.
Other stats: generally not important to tanks. Haste used to only help cause parry gib, but that may have been changed. It helps for ticks, but don't sacrifice defensive stats for it.
Now then, also compare item level. Even if the item has an odd arrangement of stats, if it's 50 iLevel higher, chances are, you should go with it. Mind you, do not equip DPS gear just because it has a higher iLevel... -.- I can't count how many tanks I have to chide on that a day...
edit: I left out Druid tanks... Sorry, I just rarely ever run into a druid that would even bother tanking much less is actually good at it... Some are, but so very many fail...
