Maybe the game has changed a little bit after cataclysm. Indeed, I should learn my Artisan Riding (225 points)at level 70 with 4250gold; Mater Riding (300 points) at level 80.

you don't need epic flying at your level, 150% flying is plenty which is very very cheap. Wait until lvl 80 or 85 to buy it.
As for your terrible tanking, its probably because you are a bad player, there is no fixing that.
