I left WoW preBC, and now I've returned to find a very different world. For one thing, professions now do a whole lot more. Skinning increases the characters crit rating, blacksmithing lets you add gem slots, etc.

I've created new characters, and I want to start leveling their professions now. I'm not interested in making money, making my own armour/enchantments, or anything like that. I want to know what the best professions will be for my characters.What are the best professions for a raiding tank, melee dps, ranged dps, caster dps, and healer? And what level do I need to get these professions to to see their full benefit?

What about for level 85 PvP? What about for twinking?
