Alright, I'm aware I JUST asked this but I'm going into way more detail.
I have I 70 mage that I'm twinking to the max.
She has Engineering and Tailoring.
For the tailoring I'm getting the enchants to the cloak/pants etc. And i'm getting the Sunfire robe which only requires tailoring to MAKE but not to use. After you make it, it's soulbound.

So, let's say I unlearn tailoring, can I still keep the enchants on my items from the tailor only enchants? Or would I have to stay tailoring?

Also, if I dropped tailoring for JC, got the 3 +34 intel gems, would I keep the gems if I unlearned it?

The enchants and the gems require a certain level in the profession. If you drop the profession then you lose the profession specific enhanced bonus. That why they say "requires tailoring" on them. If you dropped JC, you would still have the gems, but you wouldn't be able to socket them and any you had socketed will gray out and grant no benefit.
