Jewelcrafting and enchanting.

Blacksmithing is okay for plate wearers if you get chaos orbs and everyone does need the belt, but jewelcrafting and enchanting are needed by every class in many different pieces of equipment.

Edit: You should also have one character as a gatherer (mining and herb) to feed your production skills on your other toons.

A lot of the professions can be pretty valuable, especially to profit off of.

One thing you might want to consider is, the bonuses that specific profession gives that, that only people who have that can use. For example, tailoring is a decent profession. Not only can you make embersilk bags which will make you a pretty penny, but also tailors who reach a certain level you get a sword embroidery recipe that activates randomly with a large attack power boost (for melee toons, they have ones that benefit casters as well).

Jewelcrafting is a good profession too, as you can make gems to fill in your sockets. Every gem you add into your armor makes a big difference. Especially if you have a build going. For example, I am a rogue, so I socket in as much agility gems as I can. Stamina is good, we all want more HP, but a few thousand HP isn't going to help me as much as +30 agility. So I never stack up on stamina.

You will always find people who need inscription. The profession bonus gives you a really nice enchant to your shoulders, that only inscriptors can use. Plus all the glyphs that you will be able to make will benefit you pvp/pve wise, and gold wise since it is something we all need and want.

Blacksmithing isn't bad either. It kind of sucks making everything, especially since the make-time can be kind of boring, lol. But it's a useful profession. The blacksmithing bonus that only blacksmithers get is an extra socket bonus for your bracers and gloves, that you can add into your armor. A belt socket can also be made, however you don't need to be a blacksmith for the belt one. So anyone can use it - meaning it's something you can sell for profit. The armor that you can make toward the finish of blacksmithing is pretty decent too. You can wear that until you get yourself some pvp or raid gears. And also sell sets of gear to other people.

If I were to choose 2 professions personally, I would go with jewelcrafting for sure as one of them. And either enchanting, or inscription as my second. Enchanting gives you ring bonuses that only enchanters can use, plus you can make mending/landslide for weapons, which are extremely useful for end game fighting.

Good luck!
